March came in like a Lion and quickly gave way to warmer, sunnier days and hope of things to come in our gardens. The vegetables listed on the “In Season in March” graphic are limited compared to the summer months but it still boasts an impressive list of greens. When considering What’s In Season in March, one of my favorites on this list is Bok Choy.
Bok Choy, also known as Chinese Cabbage is a cruciferous vegetable like kale, brussels sprouts and broccoli. Bok Choy
is a nutrient powerhouse rich in vitamins, minerals, antioxidants and fiber all of which promote bone, vision and heart health as well as reduce the risk of cancer.Bok Choy can be sauteed, roasted and cooked in soups, stir fries and rice dishes and it also makes an excellent raw salad. Every time I demonstrate the Bok Choy Salad at a tailgate or Farmer’s Market it is an instant hit increasing the vendor's sales of this vegetable.
